Recipe Chicory with balsamic

Pan: VH25, VH25H, VH30H, VH30

Ingredients:

  • 4 chicory stalks
  • 2 tablespoons of olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves of garlic, finely chopped
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese

Instructions:

  1. Preheat the barbecue over medium-high heat.
  2. Cut the chicory stalks in half lengthwise so that you have 8 pieces.
  3. In a bowl combine the olive oil, balsamic vinegar, chopped garlic, salt and pepper. Mix well to make the dressing.
  4. Place the chicory stalks in a skillet and drizzle with the dressing, making sure all the pieces are well coated.
  5. Place the skillet on the barbecue and cook the chicory for about 5-7 minutes per side, or until they soften and begin to caramelise slightly.
  6. Remove the skillet from the barbecue and serve the chicory immediately. If you like, you can sprinkle some grated Parmesan cheese on top for extra flavour.

Endive with balsamic dressing from the skillet on the barbecue is a delicious side dish that goes perfectly with grilled meat or fish.
