Recipe mini Cheesecakes with strawberry topping from the barbecue

Time: 1 hour (excl. cooling)
Number of persons: 7
Pan: VH.MUFFIN

Ingredients:

  • 150 g biscuits
  • 100 g butter
  • 500 g cream cheese
  • 160 g granulated sugar
  • 8 g vanilla sugar
  • 3 eggs
  • 125 g crème fraîche
  • pinch of salt
  • Strawberries for garnish

Instructions:

  1. Heat the barbecue to a temperature of 140 degrees with indirect heat.
  2. Melt the butter and finely crumble the biscuits. Mix the melted cream butter with the crumbled biscuits to form a biscuit dough.
  3. Place cupcake tins in the VH.MUFFIN muffin tin and cover the bottom of each tin with a layer of about 0.5 cm thick biscuit dough. Press the dough flat with the bottom of a glass or a teaspoon to press it down firmly. Repeat this step for all the moulds.
  4. Take a deep bowl and beat the cream cheese for two minutes until soft and creamy. Then add the granulated sugar, vanilla sugar and a pinch of salt, and beat for another 2 minutes to mix everything well.
  5. Add the eggs one at a time, beating after each addition until the eggs are fully incorporated into the mixture. Finally, add the crème fraîche and beat for about a minute until everything is well blended.
  6. Pour the cream cheese mixture into a measuring cup and fill the prepared cupcake moulds to just below the rim.
  7. Place the muffin pan with the cheesecake tins in the preheated barbecue at 140℃ and bake for 18 to 25 minutes. The exact baking time may vary depending on the barbecue and mould placement. Check the cheesecakes after 15 minutes to judge how much longer they need to bake. The centre of the cheesecake should still be wobbly when it comes out of the oven. Do not bake the cheesecakes for too long, as they may dry out and crack.
  8. Let the cheesecakes cool completely in the muffin tin before placing them in the fridge. Cover them and keep them in the fridge for at least 3-5 hours, preferably overnight (at least 8 hours). When the cheesecakes are well chilled, the wobbly centre will firm up.
  9. Remove the paper moulds only before serving and garnish the cheesecakes with strawberry slices. Enjoy these delicious mini cheesecakes!
