Recipe for Glögg, scandinavian mulled wine

Pan: VH3.8L (good patina is necessary)

Ingredients:

  • 1 bottle of red wine (750 ml)
  • 1 cup port wine
  • 1/2 cup brandy
  • 1/2 cup sugar
  • 1 orange, sliced
  • 1 lemon, sliced
  • 10-12 whole cloves
  • 2 cinnamon sticks
  • 2 cardamom pods
  • 1 star anise
  • 1 vanilla pod (optional)
  • A handful of sultanas
  • A handful of chopped almonds

Instructions:

  1. Pour the red wine, port wine and brandy into a large saucepan over low heat.
  2. Add the sugar and stir well until the sugar is dissolved.
  3. Add the orange and lemon slices to the pan.
  4. Stick the cloves into the peel of the orange slices so that they are well infused with flavour.
  5. Add the cinnamon sticks, cardamom pods, star anise and vanilla pod (if using) to the pan.
  6. Simmer the mixture on a very low heat, without letting it boil. Leave it for about 20-30 minutes to allow the flavours to blend well.
  7. Add the sultanas and chopped almonds and stir again.
  8. Taste the glogg and add more sugar to taste if needed.
  9. Strain the glogg to remove the spices and fruit, or serve it as is for a more rustic look.
  10. Pour the glogg into mugs or glasses and serve warm. You can garnish with extra orange or lemon slices if you wish.
