Rich onion soup with bacon and a cheese roll

Serves 4
Pan: VH6.1L, VH6.1L+

Ingredients:

  • 50 grams of butter
  • 200 grams of bacon
  • 70 grams of tomato puree (1 can)
  • 40 grams of celery leaves (chopped)
  • 600/700 grams onions (cut into half rings)
  • 3 cloves of garlic
  • 2 tablespoons of flour
  • Ketjap manis (sweet)
  • 1 teaspoon sambal
  • 1 teaspoon thyme
  • 2 bay leaves
  • 4 beef stock cubes
  • 4 litres of water
  • French bread
  • Gruyère cheese, or other cheese to taste (grated)

Preparation:

  1. Melt the butter in a pan and fry the onions and garlic for 10-15 minutes on low heat.
  2. Add the bacon and fry until cooked.
  3. Mix the tomato puree and celery leaves into the onion mixture and fry for 2-3 minutes, stirring.
  4. Add 2 tablespoons of flour and stir well until a roux forms.
  5. Add soy sauce manis, 1 teaspoon sambal, 1 teaspoon thyme, 2 bay leaves and 4 beef stock cubes.
  6. Pour 4 litres of water into the pan and simmer the soup on low heat for half an hour.
  7. Heat the oven on the grill setting.
  8. Meanwhile, slice baguettes and sprinkle generously with grated Gruyère cheese, or another cheese to taste.
  9. Place the baguettes in the oven under the grill until the cheese is melted.
