Recipe Braaibroodjies with an Italian twist

Ingredients:

  • 4 bread rolls (we used pita bread this time)
  • Green pesto (homemade or ready-made)
  • 2 tomatoes, sliced
  • 200 g cheese of your choice (cheddar, mozzarella, or a mix of both), sliced
  • Butter or olive oil (for spreading)

Instructions:

  1. Spread a thin layer of pesto on the inside of each sandwich. You can use as much pesto as you like, depending on your taste preference.
  2. Top with tomato slices and then top with a layer of cheese. Make sure the filling is evenly distributed over the bread.
  3. Spread the outside of each braaibread with a thin layer of butter or olive oil. This helps give the bread a nice golden brown colour and prevents it from sticking to the grill rack.
  4. Preheat your barbecue (braai) on medium-high heat.
  5. Place the braai breadjies on the grill rack of the barbecue and cook on both sides until the bread is crispy and the cheese is melted. This usually takes about 2-3 minutes per side, depending on the heat of your barbecue.
  6. Remove the braaibroodjies from the barbecue and let them cool for a while before slicing them into points.
