Spicy hoisin chicken thighs

  • 500gr chicken thighs
  • 200gr smoked bacon in slices
  • Chicken rub
  • 500ml hoisin sauce
  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno pepper

Preparation

  1. Rub the chicken thighs with the chicken rub.
  2. Cut the paprika and jalapeno pepper into rings and the red onion into half rings.
  3. Line your 3L Dutch Oven with the slices of bacon. Place the slices so that they run up the wall of the pan.
  4. Then cover the whole bottom with the chicken thighs and pour the Hoisin sauce over them.
  5. Add the paprika, red onion and jalapeno pepper.
  6. Fold back the slices of bacon so that you get a closed package.
  7. Put the lid on your Dutch Oven and place 15 coals underneath and 5 coals on the lid.
  8. Every now and then, use a lid lifter to lift the lid and check that it is not too dry, if necessary, add a little water.
  9. When the chicken thighs have a core temperature of 72 degrees, after about 45 minutes, your dish is ready!
