Recipe Viking Prawns with Spicy Whiskey Sauce from De Fik Erin

Ingredients:

  • 8 large prawns (thawed)
  • 4 tablespoons olive oil
  • 1 tablespoon garlic puree
  • 1 tablespoon VIKING RUB

Spicy Whiskey Sauce:

  • 3 tablespoons crème fraîche
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • 2 tablespoons honey
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon sriracha sauce
  • 1 shallot, finely chopped
  • 1 tablespoon finely chopped parsley
  • 3 teaspoons VIKING RUB
  • Whiskey or bourbon to taste

Preparation:

  1. Remove the gut from the prawns by carefully making an incision behind the head and removing the gut. Find the gut inside the prawn, a small brown thread. Use a skewer to gently lift it up. Lightly squeeze the tail of the prawn to loosen the gut and gently pull it out of the back.
  2. Mix olive oil, garlic puree and VIKING RUB in a bowl and marinate the prawns in it. Make sure they are well coated. Put them in the fridge.
  3. Make the spicy whiskey sauce by mixing all the ingredients (crème fraîche, mayonnaise, ketchup, mustard, honey, apple cider vinegar, sriracha sauce, shallot, parsley, VIKING RUB) in a food processor. Put the sauce in the fridge.
  4. Heat the VH35F Plancha/Skillet on direct heat to 200-250 degrees Celsius.
  5. Fry the marinated large prawns for about 2-3 minutes on each side.
  6. Pour a splash of whiskey or bourbon over the prawns in the skillet and let it simmer for extra flavour.
  7. Remove the skillet from the heat and serve the large prawns on a nice board.
  8. Serve the prawns with the spicy whiskey sauce for a flavourful combination.
