Ingredients:

  • 250 grams cherry tomatoes
  • 200 grams block of feta cheese
  • 2 shallots, finely chopped
  • 2 cloves of garlic, finely chopped
  • A handful of fresh rosemary
  • A handful of fresh tarragon
  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 200 ml chicken stock
  • 200 ml red wine
  • 150 ml cream
  • 2 teaspoons piment d'espelette (or paprika)
  • 1 red pepper, finely chopped (optional, to taste)
  • 250 g pasta of your choice

Preparation:

  1. Preheat your barbecue for indirect grilling at 200 degrees Celsius and add a few sprigs of rosemary to the charcoal for a delicious aroma.
  2. Melt the butter in a skillet on the barbecue.
  3. Add the pasta to the melted butter in the skillet, making sure all the pasta is evenly coated with butter.
  4. Add the finely chopped shallot and garlic to the pasta.
  5. Pour the chicken stock into the skillet.
  6. Place the block of feta cheese in the centre of the skillet.
  7. Pour the red wine and olive oil into the skillet, surrounding the feta cheese.
  8. Add the cherry tomatoes and a few sprigs of rosemary.
  9. Add the fresh tarragon and piment d'espelette (or paprika), and if desired, add the chopped red pepper for some extra spice.
  10. Pour the cream into the skillet and simmer for about 30-35 minutes at 200 degrees Celsius with indirect heat.
  11. Stir the feta cheese into the sauce so that all the flavours are well blended.
