Recipe Bruschetta al Pomodoro

Ingredients:

  • Baguette, sliced
  • Garlic butter
  • Cherry tomatoes, halved
  • Mozzarella, cut into small pieces
  • Capers
  • Anchovy fillets, halved
  • Fresh basil leaves
  • Young mature cheese, grated

Instructions:

  1. Light the barbecue and preheat it.
  2. Prepare the ingredients by halving the cherry tomatoes, cutting the mozzarella into small pieces and cutting the anchovy fillets in half. 
  3. Coat the baguette slices with garlic butter.
  4. Place the baguette slices on a greased skillet.
  5. Top each baguette slice with a halved cherry tomato, a piece of mozzarella, half anchovy fillet, and some capers.
  6. Sprinkle the topped bruschette with grated young mature cheese.
  7. Place the skillet with the bruschette on the barbecue and grill for 2-3 minutes, or until the cheese is melted and the bruschette are crisp and golden brown.
  8. Garnish the bruschette with fresh basil leaves.
