Braised beef with brown beer

Recipe for 2-3 persons (VH3.8L or VH6.1L)

Groceries

  • 500gr Beef steaks
  • 2 tablespoons dijon mustard
  • 50gr unsalted butter
  • 2 onions
  • 2 cloves of garlic
  • 1 tablespoon wheat flour
  • 300ml brown beer
  • 1/4 beef stock cube
  • 100ml water
  • 1 bay leaf
  • 2 tablespoons vinegar

Preparation

  1. Light up your BBQ and heat it to 140 degrees.
  2. In the meantime, cut the meat into pieces of about 2cm and mix them in a bowl with the Dijon mustard, you can add salt to taste.
  3. Chop the onion and finely chop the garlic.
  4. Heat the butter in the Dutch Oven and fry the pieces of beef in it. When the meat is brown all over, after about 3 minutes, remove it from the Dutch Oven. You can leave the baking fat in the Dutch Oven.
  5. Fry the onion and garlic for a few minutes on low heat in the fat of the meat. When the onion is glazy, add the flour. Fry the flour for a minute while you stir everything.
  6. Now add the beer, ¼ beef stock cube, water, bay leaf and vinegar and bring everything to the boil while stirring.
  7. Let it boil for 3 minutes, add the meat and stir well.
  8. Put the lid on your Dutch Oven and place it in your BBQ, indirect heat. Stir every now and then. If your dish becomes too dry, you can add a little beer or water.
  9. After 4 hours, remove the lid from the Dutch Oven and let everything stew for another hour without the lid so that the sauce can thicken and the meat can cook further.
  10. After 5 hours, your stew is ready. Remove the bay leaf, which is not edible.
