Recipe Creamy melted camembert with rosemary from the BBQ

Ingredients:

  • 1 whole camembert cheese (about 250 g)
  • Fresh sprigs of rosemary
  • 2 cloves of garlic, thinly sliced
  • Olive oil
  • Freshly ground black pepper
  • Aluminium foil, optional

Instructions:

  1. Light the barbecue and heat to medium-high heat.
  2. Remove any packaging from the camembert and place the cheese in a small cast-iron pan such as Valhal Outdoor's VH15H. 
  3. Carefully slice the top rind of the camembert in a diamond pattern, but be careful not to cut all the way through the cheese.
  4. Stick small pieces of garlic and fresh rosemary leaves into the slices of the cheese. Add some extra rosemary leaves to the top of the camembert to taste.
  5. Drizzle the camembert with a little olive oil and grind some black pepper over it.
  6. OPTIONAL: Wrap the camembert tightly with aluminium foil so that the cheese is completely covered but still has room to melt.
  7. Place the (wrapped) camembert on the grill rack of the barbecue. Close the lid and grill for about 10-15 minutes, or until the cheese is soft and melted.
  8. Remove the camembert from the barbecue and let it cool for a few minutes before (unwrapping and) serving.
  9. Serve the warm camembert with pieces of baguette or crackers for dipping. The grilled camembert with garlic and trosemary will have a lovely smoky flavour and be perfect as a tasty appetiser with your barbecue.
