Difference between green and white asparagus

Green asparagus, personally one of my favourite vegetables for barbecue dishes. But what exactly is the difference between green and white asparagus? Well, white asparagus grows underground and is protected from sunlight. Therefore, they are, you guessed it, white in colour. Green asparagus, on the other hand, grows above ground and is therefore exposed to the sun. This gives them that beautiful green colour.

But there is more! Green asparagus has a stronger, more pronounced flavour and a slightly firmer texture than the white variety. So if you like a more intense asparagus flavour, green asparagus is definitely for you.

What makes green asparagus so popular? Well, for one thing, they are available all year round. While for white asparagus you have to wait until spring, you can find green asparagus at any time of the year. That's super convenient! So you can use them in all kinds of dishes whenever you want.

Recipe grilled green asparagus with parmesan cheese.

Here is a recipe for grilled green asparagus with parmesan cheese from the barbecue. The parmesan cheese is optional and can easily be omitted if you are not too fond of it.

Time: 15 minutes
No. of persons: 2-3

Ingredients:

500 grams of green asparagus
2 tablespoons of olive oil
Salt and pepper to taste
1-2 cloves of garlic to taste
Freshly squeezed lemon juice (optional)
Parmesan cheese (optional)

Instructions:

  1. Preheat the barbecue over medium-high heat.
  2. Wash the green asparagus thoroughly and remove the hard ends by gently breaking them off. Chop the garlic finely or use a garlic press.
  3. Place the green asparagus in a large bowl and drizzle with olive oil and the garlic. Add salt and pepper to taste and mix well so that the asparagus are evenly coated with oil and herbs.
  4. Place the asparagus on the barbecue, preferably at right angles to the grill grids to prevent them from falling through. Grill the asparagus for about 5-7 minutes, turning them occasionally, until they are crisp and lightly seared.
  5. Tip: You can also use the Grill lid of the VH2L to grill the asparagus. They will then not fall through the grill grate anyway and still get the nice black grill stripes. Do you make a bit more asparagus? Then the VH.LID25 or VH.LID30 is a good option.
  6. Remove the grilled asparagus from the barbecue and place them on a serving dish. Sprinkle them with freshly squeezed lemon juice for some extra freshness, if desired. You can also sprinkle grated Parmesan cheese over the asparagus if you like.
  7. Serve the grilled green asparagus immediately and enjoy it as a delicious side dish to your barbecue meal.
