Recipe for meatloaf wrapped with bacon:

Ingredients:

  • 500 grams of minced beef
  • 100 g breadcrumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 12 slices of breakfast bacon

TIP: You can also use the Viking Rub to season the minced meat

Instructions:

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large bowl combine the minced beef, breadcrumbs, egg, chopped onion, chopped garlic, Worcestershire sauce, dried oregano, dried basil, salt and pepper. Mix well until all ingredients are evenly distributed.
  3. Place a piece of baking paper in the VH1L or VH2L.
  4. Shape the meatloaf mixture into an oblong loaf shape, making sure the meatloaf is compact and even in shape.
  5. Wrap the slices of breakfast bacon around the meatloaf. Make sure the meatloaf is completely covered with bacon.
  6. Carefully place the meatloaf on the baking sheet in your VH1L / VH2L
  7. Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the bacon is crispy and the meatloaf is cooked.
  8. Remove the meatloaf from the oven and let it rest for a few minutes before slicing.
  9. Serve the meatloaf wrapped with bacon as a main dish, for example with mashed potatoes and vegetables, or slice it and serve it on sandwiches as a tasty sandwich.
