Ingredients:

  • 4 plaice fillets
  • 3 cloves of garlic, coarsely chopped
  • Salt and pepper to taste
  • A handful of fresh parsley, finely chopped
  • 2 cherry tomatoes per plaice fillet, cut into quarters
  • 40 g butter
  • Olive oil (not extra virgin)

Preparation:

  1. Light the barbecue on medium-high heat, about 180 degrees Celsius, and place a skillet on the grill once the barbecue is up to temperature.
  2. Rinse the plaice fillets under cold running water and pat dry with kitchen paper. Season with salt and pepper on both sides.
  3. Heat a little olive oil in the skillet. Add the coarsely chopped garlic and fry briefly until fragrant, but be careful not to burn the garlic.
  4. Carefully place the plaice fillets in the skillet and fry for 2-3 minutes on each side, until they turn a nice golden colour.
  5. Briefly fry the tomato pieces in the skillet and sprinkle the plaice fillets with the tomato and finely chopped parsley.
  6. Remove the skillet from the barbecue and prepare the barbecue for indirect heat at 180 degrees Celsius.
  7. Spread the butter in small lumps over the plaice fillets and place the skillet back in the barbecue.
  8. Cook the plaice fillets in the barbecue for about 10 minutes, or until they are cooked and fall apart easily when touched with a fork.
  9. Remove the skillet from the barbecue and serve the plaice fillets immediately. You can garnish the dish with extra fresh parsley and lemon wedges for extra flavour.
