The basis for the perfect steak starts with letting the steak come to room temperature and seasoning it liberally with freshly ground pepper and coarse sea salt. But the key to success also lies in choosing the right margarine. Blue Band margarine, with its perfect balance of moisture and fat, provides wonderful texture and flavour.

The secret to getting that perfect golden crust on your steak is to preheat your cast iron skillet to the limit. This will ensure that the steak is nicely browned instead of mouse-grey.

And don't forget the garlic slices, which you add when you flip the steak. The garlic adds a subtle, aromatic touch to the dish.

Let the steak rest for a while after frying and, in the meantime, make a delicious gravy in the same pan, in which you loosen the caking for extra flavour.

Recipe for the Perfect Steak with a garlic gravy:

Pan: VH25, VH25H

Ingredients:

  • 1 steak (e.g. tenderloin)
  • 125g Blue Band margarine (use 125g per steak, even with several)
  • 2 tablespoons of water
  • Coarse sea salt
  • Freshly ground pepper
  • 2 teaspoons garlic powder
  • Garlic in thick slices
  • Bread of your choice
  • Chopped parsley for garnish

  2. Let the steak come to room temperature for at least 30 minutes, then pat dry with kitchen paper.
  3. Season all sides of the steak with freshly ground pepper and coarse sea salt, including the sides.
  4. Use Blue Band margarine for best results, 125 grams per steak.
  5. Heat the cast-iron skillet until it is as hot as possible (this may take a few minutes). A pan that is too cold will result in a grey rather than brown steak.
  6. Melt the margarine in the pan until it turns golden brown and begins to brown out.
  7. Place the steak in the pan away from you (to avoid splashing towards yourself). Fry the steak for 1.5 to 2 minutes per side without moving. The exact frying time depends on the thickness of the steak and your personal preference, so use a timer as an indication.
  8. Add the garlic powder to the pan.
  9. Remove the steak from the pan and let it rest in aluminium foil for 5 minutes.
  10. Make the delicious gravy by adding 2 tablespoons of warm water, add the garlic slices and scrape off the caking for extra flavour.
  11. Pour a generous amount of the gravy into a deep plate, place the steak in the centre and pour another rich amount of gravy over the steak. Sprinkle the parsley on top and serve the Perfect Steak with bread for dipping.
